Biwa no Shiro has an irresistible, sweet milk caramel fragrance, a complex, multi-faceted flavor, and a silky and pampering texture. This premium mid-tier matcha delivers prominent nutty aromatics, creating a complex yet approachable flavor profile with no bitterness.
Prepared as usucha, it is predominantly nutty, with notes of macadamia and cashew layered over a darker, deeper tone of woodsiness, reminiscent of sandalwood. This woodsy layer gives the tea an interesting and unique quality, with a sweet and nutty aftertaste that lingers long after drinking. It is mellower and richer in umami than Usucha Mozumukashi.
Named after the Biwa tea garden, one of the seven historic Uji Shichimeien gardens established by Shogun Ashikaga Yoshimitsu, best known for building the Golden Pavilion.
